Still crafted by hand in Yoshikin’s factory in Niigata, Japan, GLOBAL knives are manufactured to extremely high and exacting standards. GLOBAL knives blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives

The blade core, constructed from FC61 Fine Carbide steel holds its sharp edge and is incredibly durable, surrounded by 48 layers of Damask steel FRIODUR ice hardened to a 61 Rockwell hardness ensures extreme hardness, corrosion resistance and material elasticity of the knives. Like with other Wüsthof collections the blade is made from X50CrMoV15 steel, which was sharpened according to the PEtec method, and polished by hand. This type of steel is also easy to sharpen.
Another advantage of this blade is the crop. It doesn’t extend all the way to the edge, but does separate the handle from the blade. As such you not only keep your fingers safe, you can also use the entire edge. Also great when you want to sharpen the knife
