Shortbread Recipe

Ingredients:

  • 400g flour
  • 100g cornstarch
  • 250g softened butter
  • 150g powdered sugar
  • 6g baking powder
  • 2 eggs
  • Vanilla extract
  • A pinch of salt
  • Your choice of jam


    Preparation:

    1. In a bowl, mix the softened butter with the sugar and whisk well.
    2. Add the eggs and vanilla extract, then mix thoroughly.
    3. Sift the flour and baking powder into the mixture, add the salt, and mix by hand (without kneading) until a dough forms. If needed, add more flour. Let it chill in the fridge for a few minutes.
    4. Roll out the dough on parchment paper using a rolling pin.
    5. Cut out circles using a suitable cookie cutter.
    6. Place them on a baking sheet lined with parchment paper and bake at 180°C for approximately 12 minutes.
    7. Once the shortbread cookies are cooled, fill them with your choice of chocolate spread or jam, then sandwich them together.
