Shortbread Recipe
Ingredients:
- 400g flour
- 100g cornstarch
- 250g softened butter
- 150g powdered sugar
- 6g baking powder
- 2 eggs
- Vanilla extract
- A pinch of salt
- Your choice of jam
Preparation:
- In a bowl, mix the softened butter with the sugar and whisk well.
- Add the eggs and vanilla extract, then mix thoroughly.
- Sift the flour and baking powder into the mixture, add the salt, and mix by hand (without kneading) until a dough forms. If needed, add more flour. Let it chill in the fridge for a few minutes.
- Roll out the dough on parchment paper using a rolling pin.
- Cut out circles using a suitable cookie cutter.
- Place them on a baking sheet lined with parchment paper and bake at 180°C for approximately 12 minutes.
- Once the shortbread cookies are cooled, fill them with your choice of chocolate spread or jam, then sandwich them together.
