Miyabi 5000MCD Birchwood

The premium 5000MCD range features a MicroCarbide MC63 powder-steel core, 101-layer blade construction and a hardness of approximately 63 HRC. Natural Masur birch handles make every knife unique, while the floral Damascus pattern gives the blade its signature appearance.

Miyabi 5000FCD

The 5000FCD series combines a fine-carbide FC61 steel core with 48 surrounding layers of steel for a 49-layer Damascus blade. Its black pakkawood handle is shaped for comfortable control and finished with decorative metal details.

  2. Blade length: 16–18cm feels agile in smaller kitchens, while 20cm offers extra reach and versatility.

  4. Weight and balance: the knife should feel controlled rather than heavy at the blade or handle.
  5. Care commitment: hard Japanese blades reward careful hand washing, suitable cutting boards and regular edge maintenance.
