Miyabi is part of the ZWILLING Group and manufactures its knives in Seki, Japan, a city with a long tradition of blade making. Each knife brings together Japanese craftsmanship, contemporary design and carefully selected steels and handle materials.
The premium 5000MCD range features a MicroCarbide MC63 powder-steel core, 101-layer blade construction and a hardness of approximately 63 HRC. Natural Masur birch handles make every knife unique, while the floral Damascus pattern gives the blade its signature appearance.
The 5000FCD series combines a fine-carbide FC61 steel core with 48 surrounding layers of steel for a 49-layer Damascus blade. Its black pakkawood handle is shaped for comfortable control and finished with decorative metal details.
| Knife shape | Best for |
|---|---|
| Gyutoh | An all-purpose chef's knife for slicing meat and preparing larger vegetables. |
| Santoku | Versatile everyday preparation of vegetables, meat and fish. |
| Nakiri | Straight, controlled chopping and slicing of vegetables. |
| Shotoh | Peeling, trimming and detailed preparation of fruit and vegetables. |
| Sujihiki | Long, clean slices through cooked or raw meat and fish. |
| Bread knife | Slicing crusty loaves cleanly with a serrated edge. |
Hand wash your knife with mild detergent, dry it immediately and store it in a knife block, sheath or on a suitable magnetic rack. Use wooden or quality synthetic cutting boards and avoid glass, stone and ceramic surfaces. Maintain the edge with an appropriate whetstone or compatible sharpener.
Yes. Miyabi knives are manufactured in Seki, Japan.
5000MCD is the premium Birchwood series with an MC63 powder-steel core, 101-layer construction and natural Masur birch handles. 5000FCD uses an FC61 core, 49-layer construction and black pakkawood handles.
A Gyutoh or Santoku is the most versatile starting point. Choose a Gyutoh if you prefer a Western-style chef's-knife profile, or a Santoku for compact, all-round preparation.
Hand washing is recommended to protect the blade edge, finish and handle.
As a former chef, I know the best knife is not simply the most expensive one—it is the knife that feels balanced in your hand and suits the food you prepare most often.
For a first Japanese knife, start with a versatile Gyutoh or Santoku. A Gyutoh has a longer, gently curved profile that works well for rocking cuts, slicing meat and preparing larger vegetables. A Santoku is usually more compact and excels at everyday chopping, slicing and dicing.
If you are deciding between Miyabi ranges, choose 5000MCD Birchwood for its premium MC63 steel, natural handle and distinctive finish, or 5000FCD for refined Japanese performance with a durable pakkawood handle.
